In terms of a graphics card, an Nvidia GTX 680 or AMD Radeon HD 7970 are top of the pile for the moment (there is a Nvidia GTX 690, but it's double the price of these two) at similar prices, you'll need to go read the reviews for these cards to see how your games will play, maybe go read the GTX 680 reviews as they should be comparing it against the HD 7970.
As for SLI or Crossfire, I would think it's overkill with such a top end card, graphically both GPU's should handle all games on there own without needing a second card.

As for an SSD with the Vertex 4 you've already picked out one of the better SSD's, so I'd recommend staying with that.

I currently run an AMD Radeon HD 6950 (The exact same hardware as the 6970, just locked by firmware). This card copes perfectly well with all of those games, with BF3 not on ultra fully, but a mix of ultra and high. This is mainly due to the rest of the hardware in my system is dated Core2Quad CPU and only DDR2 RAM. So any 6900 series and above will be perfectly fine or the Nvidia equivalent.
