I've got my hands on a bit of money recently, and decided to assemble my 'guilty pleasure' PC. It's going to have a 3 way SLI GTX580, and a Intel 980X for CPU. I don't want to overclock. Would I need water cooling for that? If not, which fans would you recommend?

I shouldn't think so. All depends on the Tower Case you select.
I would go for a Gaming Case as they provide better Cooling.

Since you've said you won't be overclocking the processor there is no real need for water cooling as it would be overkill for your needs, you would have to be doing some serious overclocking to see any value in the higher spend for water cooling.

Any decent air cooling fan for your CPU will keep it cool enough and even allow a little overclocking if you wanted to at a later date, good air cooling fans generally provide ample room for overclocking or keep the CPU quite cool, the same goes for well ventilated cases and case fans as well, generally the lower the temperature of your system the less stress on it and the longer the equipment will likely last, so it is worth spending that bit extra on a good case and cooling system because in the long run your computer will thank you for it.

And you won't need ear plugs to use it :)

All good Advice above, But I think your question results in a new trend in after market CPU coolers moving away from the more traditional heat pipes to a self contained sealed water cooling system?

In days gone by, Water cooling would involve installing water tanks, radiators, pumps, heat transference plates and plumbing them all together making sure you have no leaks !!

However their seems to be a new type of water cooling system appearing recently that looks like this

As your asking I would say avoid it for now, as you would have to consider routing the pipes, pipe length to where you mount the radiator, all seems to be adding problems to your build when if you don't want to or intend to over clock you may as well get an air cooler that just clips onto the top of the CPU, job done
