ASUS - are there any others worth buying?
    CPU:
Q6600 at 4.0Ghz per core (Watercooled)
    Memory:
    OCZ PC8500 4x1GB sticks

Ok, do the exact same as above only this time let the system decide on the memory multiplier (the 2.00 or the 1:1 setting and save and exit and see if it gets any further)
Also when you set the memory multiplier to AUTO - you should be able to see what the system sets it at, can you tell me what the system is trying to run it at

Sorry just had a thought, do you see an option for 2:1 in the memory multiplier?
why Gigabyte has started using this stupid format for fsb:memory timings is probably most of the problem

Auto on the memory multiplier doesn't work. I tried to find the 2:1 while it was stable at 3.1ghz so these are the results i got some multipliers didnt work and just reverted back to default.
    2.00D-1:1
    2.66D-3:4
    3.00A-2:3
    3.2B-5:8

    2.4B=Didn't boot
    4.00B-Didn't boot
    3.33D-Didn't boot
    4.00D-Didn't boot
    4.00C-Didn't boot
    4.00A-Didn't boot

Sorry guys, the 3.00A one should be fine with your RAM, My brain is a bit in meltdown at the moment
With a 443FSB (3.1GHz) you should be able to run your RAM and it be stable quite easily, you are aiming to get the RAM at the divider that closest matches your RAM (native or maximum rated speed)
BUT your MOBO should be able to do the calculations with the divider itself in most cases (yes its not as good having everything on AUTO as it is to manually configure it) but some boards and components do not play nice together as you have found out
I will try and be on more to help you starting tomorrow ok

What heppens when you use the 2.00D for the 1:1 as thats what you are 'ideally' aiming for but you would need around 1800Mhz RAM for that to run

But when you push past 3.1Ghz its unstable? as in BSOD not prime stating that the workers have stopped working.
The issues you will be having will either be the North Bridge (MCH) voltage will not be high enough to support the overclock as in the RAM.
Your RAM should not be able to support the said multipliers that you say they are stable at :(

I honestly think at this point, if you have it stable at 3.1Ghz and you have no adverse affects you should consider that a good overclock knowing that you have a chip that only has a 7x multiplier and a board that is known to be a pain in the behind
Until you upgrade to a newer chip I would say that you have done as much as you can do without us both losing whats left of our minds :)

If you decide to have a further play with the settings in the BIOS and run into trouble by all means ask, but be VERY careful when upping things like the MCH voltage as the passive heatsinks have a tendency to get very hot.

from 2.3 to 3.1 is considered a good overclock
